Cersei apparently killed him in a horrible moment that was too much for even HBO. Benioff confirmed as much in a recent interview with Entertainment Weekly(though we have our doubts about how serious he was).

Before you start to despair at the unfair death of a sweet, little kitty, remember: winter is here. The White Walkers are beyond the wall. Death is no longer the end of a long journey, but rather a direct threat that's marching ever-forward to (we think?) kill all humans.

As Mashable's Alexis Nedd pointed out in Slack while we bemoaned this awful turn of events for poor Ser Pounce: "I'd be into seeing a wight Ser Pounce taking down Cersei with one chilly bite."
